Tabbouli, All Kinds of Tabbouli Salad


According to Wikipedia,Tabbouli is a salad of Arab origin and is traditionally made of bulgur ,tomato,and finely chopped parsley and mint ,often including onion and garlic ,seasoned with olive oil,lemon juice and salt .Sometimes we can place some ingredients instead of bulgur or even add something to Tabbouli salad ,something like quinoa,avocado and couscous. Here are recipes of all kind of Tabbouli salad.

All kinds of Tabbouli salad Recipes:

Classic Tabbouli with bulgur wheat :


1 cup bulgur wheat

2 cups boiling water

3 green onions, chopped finely

2 tomatoes ,chopped finely

1/4 cup lemon juice

2 tablespoons olive oil

1 teaspoon salt

1/4 teaspoon black pepper


Step 1 :

Cook bulgur by bringing water to boil ,add bulgur wheat to the pan and simmer for 15 minutes. Set aside to cool .

Step 2 :

Combine cooked bulgur wheat ,green onions,tomato and parsley with lemon juice,olive oil,salt and pepper.

For dressing more you can add mashed garlic ,lemon zest and lemon juice into a bowl .slowly whisk in olive oil until emulsified .Add salt to taste.

Vegetarian Quinoa Tabbouli Salad :



1 cup quinoa

2 large tomatoes finely chopped

1 large cucumber finely chopped

4 scallions finely chopped

2 cloves garlic (minced)

1 cup fresh parsley (chopped)

3 Tablespoons fresh mint (chopped)

2 cups water

1/4 cup olive oil

1/4 cup lemon juice

1/2 teaspoon salt


For cooking quinoa: place quinoa in a saucepan and add the water and salt .Give it a mix ,put the lid on and bring it to a boil in medium high heat . Once it comes to a boil ,turn down the heat to low and cook for 10-12 minutes or until water is fully absorbed . Take it off the heat and let it rest for 15 minutes .Fluff it with a fork and place it in a large salad bowl .

Meanwhile prepare the dressing by whisking all dressing ingredients like lemon juice,olive oil,salt and pepper in a small bowl . Set it aside .

To make the quinoa Tabbouli: place all Tabbouli ingredients such as chopped parsley,tomatoes,onions,garlic,cucumber, mint in the bowl with the cooked quinoa.

Drizzle it with the dressing. Give it a toss .

Taste for seasoning and serve immediately.

Avocado Tabbouli Salad Recipe:



1 cup simply seasoned bulgur

3 medium ripe tomatoes,diced

1 ripe avocado,peeled and diced

1 cucumber,peeled and grated

2 tablespoons finely chopped red onions

1/4 cup chopped flat leaf parsley ,fresh basil or mint

Salt and pepper to taste

2 tablespoons fresh lemon juice

1/4 cup olive oil


Combine cucumber,tomato,simply seasoned bulgur ,parsley and onion in a medium bowl. Drizzle with lemon juice and oil ,and sprinkle with salt ;toss well to combine ,gently fold in avocado. Arrange Tabbouli in a serving bowl or on a plate .You can sprinkle evenly with smoky roasted chickpeas.

Couscous Tabbouli Salad Recipe:



1 cup couscous

2 ripe tomatoes,seeded and diced

1 cup water

1/2 teaspoon salt

1 cup chopped peeled cucumber

3 scallions,chopped

1 lemon, zested and juiced

Freshly ground black pepper

1 cup finely chopped parsley


Step 1 :

Place couscous In a medium saucepan with 1 cup water and salt and bring to a boil over medium heat and cook couscous until al dente ,10 minutes.  Drain the couscous and set aside to cool .

Step 2 :

Meanwhile,in a small bowl ,whisk together the lemon juice and zest with the olive oil to make a vinaigrette. Season with salt and pepper to taste.

Step 3 :

In a large serving bowl,mix together the couscous,parsley ,tomatoes  and scallions. Toss with the vinaigrette and season to taste .Allow it to sit for at least a half hour so the flavors can marry .

What to serve with Tabbouli:

Tabbouli is traditionally served as a side dish mostly with meat dishes , borek , and even as a vegan main course,especially when it is hot outside.
